Cajun's Choice Jambalaya Seasoning Mix Usage Instructions:
You’ll need: Cajun’s Choice Jambalaya Seasoning Mix, 1 1/2 lb. boneless chicken (cut into bite sized pieces) and/or medium uncooked, cleaned shrimp, 1 lb. smoked sausage, sliced (Kielbasa works well), 2 cups chopped onion, 1 cup chopped celery, 1 cup chopped bell pepper, 4 cups chicken broth, (1) 15 oz. can diced tomatoes, 2 cups long grain rice (uncooked) Brown sausage and chicken in 6-8 quart pot (if needed, use 2 tablespoons butter or olive oil to prevent chicken from sticking). Remove meat from pot and set aside. Drain off all but about 2 tablespoons of drippings, add vegetables and sauté on medium heat for 15 minutes. Return sausage and chicken to pot, add broth, tomatoes, and Jambalaya Seasonings Mix. Bring to a boil. Add uncooked rice. Cover and simmer 5 minutes. Stir well. Cover and cook over low heat an additional 45 minutes. If using shrimp, stir in during the last 15 minutes of cooking. Serves 6-8. The leftovers are great in the microwave.

Preheat to 375°F. Lightly brush casings with butter or oil. Cook for 10–14 minutes, turning halfway through until the skin is delightfully crispy.
Place over indirect, medium-low heat on pecan or hickory coals. Turn frequently for 8–10 minutes until casings are taut and lightly charred.
Thaw overnight in the refrigerator. Transfer to a heavy Dutch oven or saucepan over medium-low heat, stirring occasionally until hot and bubbling.
